A life long dream realized
The Roost was founded in 2014 in Sarona, Wisconsin with a single vision in mind: to serve beautiful, homemade, delicious food with the best available, locally-sourced ingredients. This remains the vision to this day.
Owner, Jeff and Executive Chef, Steve, have been life-long friends and spent their high school and college years working in the food service industry. After graduation, each pursued careers in other fields, married, raised families and realized after 23 years that they still hadn’t gotten around to opening that restaurant they had always dreamed of opening back in the day.
The timing appeared right in 2013 with the availability of the Katty Shack in Madge Township, just down the road from Jeff’s parents’ home. Jeff purchased the restaurant in January 2014 and The Roost of Sarona opened on April 1 st 2014 after an extensive redesign led by Jeff’s wife, Becca.
The doors opened with a focus on presenting an unforgettable breakfast experience to their customers. That focus continues to this day with unique (and always made-from- scratch) offerings including Crab Cake Benedict, Beef Tenderloin Hash, Cranberry French Toast, and much more. Roost Roast Coffee might just be the star of the show, roasted every week in nearby Hayward, WI with an exclusive blend of South American Arabica beans and ground fresh for every pot.
The Roost’s now famous Friday Night Spotted Cow Fish Fry was added in May, 2014 and has grown to become one of the region’s most popular Friday night destinations. The initial concept of having an all-inclusive dinner with choice of appetizer, soup or salad, entrée choice and side choice remains the Friday hallmark with new and different culinary twists being featured regularly.
In 2015, The Roost added what has become a favorite of locals, our endless Wings or Shrimp on Wednesdays and Thursdays. Featuring jumbo chicken wings and White Tiger Shrimp with multiple preparation and sauce options, reservations are always a good idea if you want to ensure a seat at the table. These nights also include a truly gourmet special option featuring ingredients including lobster, lamb, clams, salmon, and much, much more all at affordable prices.
Local partnerships, particularly with our neighbor Hunt Hill, also grew in 2015. Hunt Hill is a unique preserve just south of The Roost that offers the public a pristine old-growth forest and prairie educational experience. For Hunt Hill’s overnight campers and for some day-meetings for local organizations, The Roost provides their guests with custom meals throughout the day.
In March, 2016, The Roost reached an agreement to assume food operations at Spooner Golf Club, the premier golf and dining event location in Northwestern Wisconsin. The Roost at Spooner Golf Club boasts a full bar and special event seating and dining year-round for over 100 guests. From May through September, The Roost at Spooner Golf Club carries on the long tradition of Friday Night Fish Fry with great food and unforgettable views overlooking the iconic fairways and greens of one of the few “must-play” golf courses in all of Northwestern Wisconsin.
Due to popular demand, The Roost also vastly expanded its large-scale catering operations to accommodate needs of brides and grooms throughout the area along with local churches and businesses in search of truly special treatment at multiple venues.
Private Catering has also become a specialty of the house. Vacation homes abound in and around the amazing lakes of Northwestern Wisconsin and there has been a steady increase in the desire for small-group, at-home catering. The Roost prides itself on being able to satisfy the needs of this market and you just might find both Jeff and Steve in your kitchen expertly preparing foods you only expect to find at Michelin-rated restaurants. Today, The Roost is a regional leader in providing amazing cuisine at attainable prices. For groups from four to four hundred, The Roost has the expertise and staff to make your breakfast, lunch, dinner or event spectacular in every way.
